Boudan and Okra with stewed Tomato's and some of my home grown Cajun seasoning. I've used Okra in Gumbo, Red Beans, and even Pinto's for years but this was the first time I made it as a side dish......holy chit.....I about made myself sick. I'll definitely be making that again.........often... I'm seriously thinking about moving to LA at this point. I used this recipe but I used 1# of frozen Okra, garlic powder instead of garlic salt, and my Cajun seasoning instead of Lawrys. https://spicysouthernkitchen.com/stewed-okra-and-tomatoes/

Looks damn good. Like a Cajun Bayou sausage and peppers thing going on.

I never thought of Okra as a Pepper but it does have seeds so....yea. It was something new so that's a good thing but it was also delicious so it'll definitely go into my rotation. The bad news is.....that was the last of my Boudin.

We love stuffed peppers. I usually do them in the pressure cooker though. All the way through ? Meat as well as the bell? Asking because I have a Presto 6 qt. PC. Thanks. Correct. Just stuff them with the raw meat and into the pressure cooker they go. If you're using rice in your mixture precook that, and then add it to your ground meat with all the seasoning and onions and garlic or whatever. Once they cool, dig in. On a rack? Liquid? How long? Be interested in a shortcut to killer stuffed peppers! When I want stuffed peppers and don't have a lot of time to prepare, I brown Italian Sausage (Hot or Mild) with onion, garlic, spices, then stir in a block of cream cheese. Fill the peppers with the mixture and put on the grill. Delicious! I tried them on the smoker one time and ruined them. The smoke made that mixture pretty crappy tasting.

No rack but it wouldn't hurt. 15 minutes give or take. I pour a can of whole peeled tomatoes in there as well. Sometimes two. Just over the top and all around.

I stuffed a batch of hot Italian sausage and bratwurst today from a muley I harvested last Thurs. I simmered one sausage and what was left in the grinder that didn't make its way in to the casing in some sauce and poured over spaghetti- ummm ummmm goood.

Add chunks of this cheese to your sauerkraut and let it simmer with deer sausage. (or dogs/brats) Once it melts, stir it to mix it in with the kraut. Turns out fantastic. It was a hit in the fish house. I found the cheese at SAM's club.
