Tried this tonight, on the confidence of Jud...grin... Pretty good, although my cook time was way more on the Chuck (say 1/3 more) than brisket for some reason. Bark was tough to obtain too. Tasted fantastic though. Three pound chuck roast at 225 took 6 hours to come to 185. No worries. Glad I started early.
