I don’t like the richness of straight cream cheese. I think the wife mixes it with cream of chicken.

We obviously have some very gifted cooks among our ranks. Every time a food thread runs on here I'm impressed by the offerings. We make all kinds of casseroles-of course here in Minnesota, you're outed as a traitor to the state if you don't call them "hotdish". That green chili chiken really looks good.

To add she leaves it in the oven and extra 10 min or so to get the cheese and coating to just turn dark brown on edges just for me. When she makes it for outside the family its much lighter and more what you might see in a restaurant. Question........how hot are the chili's used in making this? Mild Poblanos so usually mild however depending on where they are grown you can get some in the lower jalapeño range of heat. I wonder why this thread here rather than the food area?
Anyway I think one can leave out the cream cheese and add 1 can of Cream of Chicken soup
