Finished off the Wensleydale my friend left so I opened a pack of Kerrygold Dubliner that I picked up last time I was in town. Another winner. Winco had a couple of other Kerrygold cheeses so I'll pick some up when I get a chance. I'd like to try their Cheddar..... hope they have it https://www.kerrygoldusa.com/products/dubliner-cheese/I've been trying to gain some weight so I've been having crackers and cheese every afternoon. Haven't gained a pound but I'm digging the different cheeses.

I like the dubliner too.
Keep an eye out for the old croc cheddar. It's not bad.

Been a Dubliner fan for about a decade. Every month Ill check out Costco for their special in store rebates on cheeses not advertised. You actually have to be in the store. Its how I try different cheeses. Heres one I found yesterday. I break into it in a few more days when all the triple cream brie is gone.

Wine pairing with cheese.
Is there a rule of thumb for red or white with certain cheeses ?
Pinkey extended of course.

Good on you Charlie. Those Irish cheeses are pretty good. Wife and I like a good Stilton too.
Funny, I was just thinking this morning about starting a cheese thread up in the zoo. See who's like me, I eat cheese most every day, any kind just about. Gotta have it around. Cream cheese, mozzarella, cheddar, jack, peccorino Romano, and for me the PBR of cheese.....Jarlsberg from Costco.
One thing I miss here is that even with all the good Ag items we can get at the farmers' market, there's no dairy or cheese making outfits nearby. And we have excellent bottomlands they grow beef on that look perfect for a dairy. We have a number of goat operations here too, but not dairy goats. I loves me some chèvre.
Enjoy your cheese and crackers this afternoon friend.
By the way, what crackers are you enjoying lately?

I tried a new cheese last night.
A snack size Fontina cheese from Bel-something or other.
It was good.

I eat cheese and crackers every day too. My grandmother says it’s good for little boys and I don’t feel like outgrowing it just yet.
I like most every kind of cheese but for ease of access with the little mom and pop grocery we have here I generally stick to cheddar or pepper jack for the after work cheese and cracker sessions. I’ll slice up about 2” off the block, about 2” off the stick of Bridgeford pepperoni, and a big handful of cracked pepper trisquits. Glass of tea or a cold beer and my 3 year old helper on my lap sharing with me. Pretty good stuff

Mostly Club or Ritz Geno I'm not ready to become a cracker snob just yet but I'm working my way up to it.

As for wine I drink reds with everything. I'm partial to Old Vine Zins as they are vintage local. Not to mention Three Buck Chuck.

Coastal Cheddar is now on the approved list for future purchases if at the right price. Very crumbly though when cold. Snappy flavor but not overly done. Easier to find and taste the calcium crystals when its been warmed up to room temp.
Easily one of my favorites now. I'm a cheese slut though.
