And do you use baking soda or lye? Made a batch with soda, ordered up some lye.

Going to make a pretzel ring with beer cheese dip for sunday's family reunion Christmas lunch. Using baking soda. I'll save the lye for Granny's soap recipe.

They sell premixed in a bag around these parts. Usually Amish companies. Some are sweet with sugar in the mix, and I prefer the plain stuff. Fresh pretzels are pretty standard in mom and pop food stores, even the gas stations.

Jack has it right.
Roll out, let rise. Bake, brushing with baking soda/water mixture. That will get you the chewy crust you're looking for.

Well, made up a batch with lye today. Was super easy, came out great, family enjoyed them. Paired well with my Brown Ale I made recently. Results are in, lye pretzels far superior to baking soda pretzels.
