It's been a long time since we mad a cobbler. It's all good, we have some Ontario wild blueberries that make a splendid cobbler. Peach, apricot, most any sweet fruit is good.

Just finished taking a cherry cobbler out of the oven, looks good, smells great, waiting for it to cool off some, I've got some ice cream to top it off with. Rio7
2 cans of your favorite pie filling (fresh fruit if in season)
One can soda of your choice...
Fruit on bottom of Dutch oven....cake mix over the top....
Then dump 12 oz can of soda in...no mixing
Oven or charcoal until crispy brown....60 minutes (ish)
I do the same thing, except replace the soda pop with a stick of butter. Either melted and poured, or placed all over the top in thin slices. If using canned peaches I also sprinkle some cinnamon. Fan-freaking-tastic for very minimal effort.

The layered version is how I grew up. Have had the bread pudding or puffy dough in with the filling many times. But layered still steals me away.
A deep casserole dish, a mildly baked piece of pie crust on the bottom. Pour the warm fruit with juice over it. Another layer of the crust, pour another layer of fruit & juice. Repeat. About 4 layers is gettin there. Let it cool.
A 4 layer deep fruit pie, with the crust saturated with the juice? Good gosh.
My favorite version might be the wild blackberry ones that used berries from papaws farm.
Why would you ruin a good peach cobbler with a cake mix? It's so easy to make it the first place, just use quality ingredients & you can't miss! First, slowly melt one stick of salted butter in your dutch oven, mix 2 cups all purpose flour with 2 cups sugar, 1 tbl spoon baking powder & 1 1/2 cups milk. Slowly pour you batter over the butter, Slice 2 quarts peaches & spoon over top of the batter. Bake at 400 degrees for about 1 hr, test with a tooth pick. I leave the lid on for the first 30 minutes then take it off so the cobbler with brown. Make sure you add your cinnamon before popping your little beauty into the oven. Cake mix & soda $%(@#$! Try it both ways & do the taste test!!!!!!
