My brother does...uses the daikons from the ranch (usually forage for the cattle) and though he's usually hell on following recipes, he makes some kick ass radish kimchee (likely from having lived in Korea for a few years when deployed). I'll get the recipe from him.

They are....I just didn't know you could make kim chi out of them.
Thought it had to be cabbage....napa or otherwise.

Thought it had to be cabbage....napa or otherwise. My understanding is that traditional kimchi is indeed cabbage, but like pickles made from things other than cucumbers, kimchi can be made with radishes and other vegetables as well. Then again, I am pretty far from being Korean.

When I lived/worked in Korea I ate it daily in Samsung's cafeteria. My favorite was made with radishes. Last summer my neighbor in Idaho made it and knowing of my time in Korea delivered a big jar that lasted most of the summer. I don't make it as I would be the only one eating it.
