Brian, I grew up catching tailor (bluefish) in the surf, in Australia, biggest was just over 10lbs.
Bleed them, put into saltwater ice slurry, fillet & skin once home, dredge in seasoned flour & into a pan of grease. Squeeze of lemon, liberal salt & you got a really great meal.
Lots of people there don't like to eat them, but it's more about the above prep steps, than bad, mushy, dark, fishiness !

Yeah, I'm not a big fish eater. If the wife wants some, I'll generally just filet it on the tailgate of the truck as soon as it dies. Then I skin the filet. It's OK for me if I do that. Sometimes if we get into them real heavy, we can catch 20 to 50 in a couple of hours. Generally 99.9% of them go back into the ocean. They're just fun as hell to catch. But like hunting, sometimes you go out there and don't even get a hit.
