They sure are big. Good shot, Good eaten. Unless you've been up close to one, you really cannot appreciate how much bigger they are than an elk. And the hide is about twice as thick. As for eating, the one I killed was the toughest wild game I've ever tried to eat, including the tenderloins............absolutely could not get done chewing it, just tougher than shoe leather. Not the same critter as Yukon or Alaskan moose. MM My guess is that you boned it out before it could rigor mortis on the bone. When you do that the meat rigors on itself creating the toughest meat imaginable. Virtually inedible. Not your fault..we are bombarded with the "cool it off asap "bullschidt from every angle. You absolutely have to let the muscles rigor before boning it out. I know these things Thanks for the info; I did not know that. But it was the next day before the quarters were boned out, & then, by a meat cutter, as I didn't do it myself. But it was an old bull that had been fighting. MM

I have learned from making the very same mistake.
I shot an rarly sean, non rutting buck.
Got to it immediately.
Peeled the hide off and immediately boned it out.
The muscles were still twitching.
Ithat eww as the toughest piece of schidt imaginable.
I later learned that it was theresult of a condition called cold shortening.
Google it.
