Dropped me a hen turkey day before yesterday. I took the breasts, legs and thighs.

Anyone got a good recipe for the breasts? I wanted to do something different than the usual potatoes, gravy and stuffing.

Legs and thighs I was going to cook down in the Can Cooker and make tacos.

Bone them,
Slice crossgrain, bread like pork chops.
Fry, make sure they are done, not overdone.


Damn good satin, wild or take.



Pa Dutch/German cooking.
If it dies we flour and fry it.

Oh, yeah.
Make gravy for the potatoes.

Sliced, pounded out thin, breaded and fried. Side of spaetzle and red cabbage. As good or better than any "weiner schientzle" plate.

Depending on the size you can grill the breast halves whole. If they are much more than about two inches thick can be a little tricky to get them done without drying out the outside. Worth the effort though. Marinade is a must. Anything you like but make sure it is contains lots of oil. Hard to go wrong with basic cheap Italian dressing and some lemon juice.
