A pot of chili will simmer tomorrow. We are supposed to dip into freezing. Grilled chicken breast and sautéed zucchini NYD. I am only good for two days out.

We’re ordering Chinese food for 11. That’s been our bubble since March.

Escargot and mama's homemade baguettes. It's peasant food and the most decadent meal I eat all year. I can't wait.

Sounds good! What type of tamales? Jalapeño and cheese or pork with red sauce are definitely some of my favorites.

Tonight is going to be prime ribeye's, king crab legs, loaded baked potatoes and asparagus. Tomorrow we have pork tamales, pig wings, chips & dips, etc.

I tried going vegan, but then realized it was a big missed steak.

Not my best presentation, but the flavors and doneness were spot on.

Wife made three kinds:

Roasted chicken with roasted green chilies and jack cheese.

Red chili chicken, used the red chili paste she made for pozole above.

Roasted green chile, jack cheese and sliced Spanish Queen olives.

She also beats in some of the pozole sopa into the masa to lighten it up. She does a couple of other things to it but I don't pay attention.

The chili paste is a mixture of roasted anchos, guajillo and chipotle peppers.
