Our “Poor Man's Lobster” was always Pike cubed and boiled in water with Old Bay seasoning than dipped in seasoned butter.

Here in Utah, they use striper or wiper hybrids. Fillets cubed and boiled in 7-Up, then drizzled in butter.
In truth, any white flesh fish ought to work. But it isn't anything like real lobster, to be honest.

Ya, those ling are pretty good. The texture, and flavor are very similar to lobster when boiled fresh. I found em to have a stronger flavor once frozen. Pretty good fried as fillet with lemon pepper too. We catch em at night, and they don't fight a whole lot but sure eat good!

Never heard ling called that, up here sturgeon is the “poor mans lobster”.

All these are fine, but really ought to be called "poor excuse for lobster."
Having said that, I'm not a lobster fanatic. I've eaten it, and had my share of it in Maine, where it ought to be the best there is. I just find it to be a little bit insipid. It's a nice dense white meat that's slightly sweet, but what makes it good is the butter. And a flip-flop would be good with enough butter. Not worth the often extravagant price for it, IMO.
