Had that as a kid. My mom sliced the eggs first. Love it.
Those are eggplant slices stacked up. Each slice is dipped in egg, then into breadcrumbs, then sauteed till browned, then stacked (sauced on each layer), then topped with mozzarella.

I find the trick is to cook them a little first before stuffing. I actually found that out with yellow squash and zucchini first. The extra problem with eggplant is to get past the bitterness.
