You're seeing thermodynamics at play. Because of the timescale, this can be considered an adiabatic compression of the air inside the cavity. When this compression takes place, energy is added to the "system" and the temperature rises very quickly (like the compression stroke of an engine piston), and anything inside that is combustible can ignite. In this case, the gel surface may contain chemicals that are flammable or combustible, which may be what we see ignite in the video.
