Well robert not sure why you rate but I've been asking for her to write down her recipe for many years. EdM has been waiting for two years. I must have been good in bed last night because here it is fresh off the presses this morning.
Caveats: This is her very basic meatless recipe for a small 2qt casserole. Doesn't include her homemade red chile sauce topping recipe. Assumes you know how to cook as no techniques are explained. As well she didn't include any meat filling info.

I'm gonna give that one a try to Fats, it looks wonderful. I think I can find some pasilla peppers but if i can't what would make a suitable substitute? I can about always get Anaheims and poblanos

By all means mix in some large Anaheims as well.

Picked up a 3 pack of Baby backs from Costco last week and threw them on the Traeger yesterday while doing some work around the house. I made 2 racks with some BBQ sauce(modified Sweet baby rays) and the last rack with some butter and seasonings as I’m not a huge BBQ sauce fan on my ribs. Sure can’t beat the 3-2-1s for tenderness and they sure are simple to make.
What’s in the modified sweet baby rays? I find that’s my favorite bbq Sauce
Next time I go to Costco I’m almost certain baby backs will be added to the cart
Robert I just took some sweet baby rays and added a few things like Tapatio, granulated garlic, mustard, Worcestershire sauce, chili powder and cumin. Was more of an experiment than anything. Everyone said they were delicious.
