Salt, pepper, garlic then grilled. Sliced across grain and thrown in a corn tortilla. Favorite around this house.

Leave it whole. Trim any silver skin off. Marinate a couple of hours in the Original Pace Hot Picante Sauce ( https://www.campbells.com/pace/products/picante/hot-picante-sauce/ ). I perforate the meat/marinade with a fork. The vinegar helps tenderize the meat. Grill over hot coals till medium rare. Slice across the grain. Layer on your favorite tortilla with a good homemade hot sauce and some guacamole.

You can still do pepper steak with that one. Just one suggestion.

Since I am a minority (70-30) in my area, Latino to whitey, skirt steak is very much in demand here. You usually pay a premium for it because it is such a mainstream component of the Latino diet. Every now and then you can find it on sale.

As mathman said, grilled whole, sliced against the grain. Believe me, it doesn't have to taste like ass. smile

Here's a pic of one I did a while back. Haven't been grilling as much lately. China flu. Them g-oims can fly around into the back yard too, you know. Berry, berry dangeuwous.
