The recipe that I have for Kielbasi calls for Marjoram, and I have used it and the sausage was good. I got ready to make sausage the other day and found that I was out of Marjoram, so I used sage instead, because to the best of my recall, They smelled very similar. Yesterday, I looked at three different grocery stores and found no Marjoram. Any opinions about just going with the substitution of sage going forward? miles
Look out for number 1, don't step in number 2.

You can buy Marjoram from amazon by the oz or pound.

Never used any sage in other than breakfast sausage
I use ground mustard, black pepper, cayenne, garlic powder, brown sugar, and allspice along with the cure

I like fennel in breakfast sausage. Not sure how it’d be in kielbasa.

A few years back I had the same problem with poultry seasoning. Everywhere I went, they were out. I have been watching and now it is every where, in stock. Maybe it is just my bad luck shopping. miles

I always think of fennel in Italian sausage and sage in breakfast sausage.
Kielbasa, I think of garlic. If you like it with sage, I’d just rock on. Can’t say I could pick marjoram out of a line up?

Wal-Mart app shows it as in stock in the 5 closest stores to me right now. You might need to get out of Arkansas and up into Missouri.

Thank you for your offer, but I think that I will pass. I have been eating some of that made last week with the sage, and it is very good. Maybe the best I have made so far. I did add some diced Jalepeno to the standard Kielbasa recipe along with the sage instead of Marjoram. miles
