I’ve been buying dried peppers and doing my own. But saw this on YouTube. “Simply Mama Cooks-Enchilada Sauce” really interests me. It’s next.

I do not recommend it but I had some years ago that someone made and used a can of Chili without beans. Personally I prefer using enchilada sauce. There is probably better sauces out there but we have a can on Old El Paso in the pantry.

I really hate store bought enchilada sauce. I am always disappointed it seems.... This is my favorite for cheese or beef enchiladas but I'll mix it up. It's Tex Mex, and old school technique. It's really, really good. The standard chile paste the recipe calls for I also attached. The cookbook it is out of has numerous recipes using that standard chile paste but I suspect you might could substitute a store bought one. But, homemade chili paste is very easy and is a game changer.

This is last resort stuff, mild out of a can being for pussies and all. I do add a can of the green to my broth when making green chile stew, just for green reinforcement.
