Posole and Vermont cheddar & green chile quesadillas. I'd eat 5 plates of that and get sick and conclude it was way worth it.

Running a 1200’ trot line with necks and 6’ spacing. Filled a basket pretty quick. Smalls decimated the baits so the day was short lived. Not a single 7” crab but they were excellent.

I always found 15 beans to be a little bourgeois.
14 bean is plenty.

It's what came in the bag. The last time it was ten. I guess I was slumming it on that one.

I used the HamBeens Cajun bag as a base. I wouldn't really call it Cajun, but it's a nice start. I used five garlic cloves instead of one or two. A good number of grinds of black pepper and a heavy splash of Louisiana sauce perked it up nicely.
I like that they didn't overdo the salt in their seasoning packet.
I also modify the method by cooking lid off, adding back liquid as I see fit.

Venison and veggie casserole. It's a crowd favorite. I'd appreciate a recipe for that one. Thanks No problem. See below. 1 zucchini 1 bell pepper 1onion 1pack sliced mushrooms 1 1/2 cups frozen peas 1tbsp Cajun seasoning Minced garlic 2 lbs ground meat Salt and peppet 1/2 tbsp onion powder 1/2 tbsp garlic powder 2+ cups of coconut milk (about 1.5 cans) 3tbsp corn starch Grated cheese Frozen hash browns or tater tots Directions 1. Sautee veggies and Cajun seasoning in olive oil around 10 minutes until just soft. Add garlic for last minute. Move veggies to bowl. 2. Sautee ground meat in more oil. While sautéing, season with salt, black pepper, onion and garlic powder. Preheat oven to 400 deg. 3. When meat is brown, pull pan off heat and add back veggies. Take same bowl and whisk coconut milk and cornstarch well. Pour over meat and veggies and put over medium heat. It should start to thicken. Let it cook for a few minutes, stirring frequently, so it doesn't stick. 4. Grease casserole dish. Pour meat/veggie mixture in. Add Grated cheese on top (if desired) and then put hash browns or tater tots on top. Put in oven and back until bubbly, about 30-40 minutes. Let it stand for 10 minutes before serving. Note: I've used coconut milk because we've had a no dairy thing going for a while in our house. The cheese isn't used in that situation. All that to say, you could substitute a simple white bechamel for the coconut milk/corn starch mixture. Heat 4 Tbsp of butter and whisk with 4 tbsp flour, let it cook, stirring periodically. Add a cup or more of milk and whisk, it will begin to thicken. When to consistency you want, remove from heat and add some shredded cheese (1/2-1 cup). This will thicken it more. Another note : any veggies will work. This is just a good template. Mushrooms are a favorite, so I add a lot of those. Thanks for typing that up. It sounds great, I'll give it a shot
