African Sardine Stew

Ingredients

1
medium sweet onion

1
medium red bell pepper, stemmed and seeded

1
ripe roma tomato

1
scotch bonnet pepper

1
tablespoon vegetable oil

1
10.25 oz can tomato purée

3
chicken bouillon cubes

1
tsp fresh thyme leaves

2-4
, 4.4-oz. cans of sardines, drained

RITZ Crackers, for serving
Preparation
Step 1

Combine the roughly chopped onion, bell pepper, roma tomato, and the scotch bonnet pepper in a blender carafe or the bowl of a food processor and chop or pulse until everything is coarsely chopped, about 5 pulses or 5 seconds.
Step 2

In a large skillet, heat the oil over medium-high. Add the chopped vegetable mixture and cook, stirring frequently and scraping the bottom of the pan to ensure the food does not stick, until the liquid reduces sauce thickens, about 6 minutes.
Step 3

Add the tomato puree, remaining half of sliced onion, chicken bouillon, and thyme to the vegetable mixture. Bring to a boil. Add the sardines and return to a simmer. Cook over medium heat, stirring occasionally, until sardines are heated through, 5 to 7 minutes.

Ive fried sardines, good ones, with some onion and tomatoes and it turned out really good but I love sardines.

Like the Costco season brand sardines. And they're really good for you

What, where's the taters, carrots, peas, sweet corn, and green beans?

Substitute chunked turkey for the sardines, and add some homemade flat egg noodles.

Now you have a meal in a bowl.
