The quest for the perfect crispy pork belly continues. The top half (in the pic) got perfectly crunchy, the other part, not. Still can’t figure it out, but it was damned good, along with a roast duck I picked up at the Asian market today.

An Austrian friend on another site shared their version of crispy pork, whether belly or other cuts. They boil the skin in chicken stock before finally roasting it.
You can leave off the caraway seeds (I will. It’s the one flavour I absolutely cannot stand.)
