I love home made fried rice.
We just never seem to have any leftover rice.
Maybe we need a bigger rice cooker. Made a pot of rice at lunch and let it sit out...specifically to make fried rice. Can't always count on the leftovers as you say.

Been hammerin yellowtail fish tacos since the return from Mexico. Just unbelievable… I’d throw halibut, ling, yelloweye in the garbage to eat yellowtail…

Looks tasty. Would you mind sharing the recipe? I was happy to find a shop in Germany selling dried hominy but only used it to cook it and then use it instead of corn in a kind of tomato soup. Thanks for the compliments… I don’t have a specific recipe i use. The last few things I’ve made I’ve regretted not writing down the recipe I ended up with. I should start. I used 2 boneless pork shoulders, trimmed a little fat from them and cubed them up. Cover with water and simmered with some garlic cloves, oregano and bay leaves. Constantly skimming the foam from the top. After about an hour I take some of the liquid and reconstitute some seeded/dried chiles (guajilo/acho). Add some garlic and onion and blend it into the paste you see in the picture. Mix it up and give it a try. I prefer a strong broth so i add more chilies than most. Let simmer. Add as much hominy as you like- I find hominy is a love/hate thing. I love it. Simmer until the meat is tender. Cabbage, cilantro, onion, lemon, oregano, red pepper flake added to your bowl when serving. Served with some tortillas too- I’m partial to flour. I’d suggest following an online recipe for the first time, then adjust as per your particular taste. Good luck and if you give it a go- let us know how it turned out. Right on point. I make it thru the winter pretty frequently. I do enjoy some thin sliced radish w it also. Man that stuff is food hunting camp food!

Hello Ed, sliced eggplant, rolled in flour, egg, then homemade bread crumbs from the Ol lady’s sour dough bread, then air fried in the oven. Not much for veggies but it was damn good. Gonna do er again with fresh yellowtail collars/bellies tonight Been hammerin yellowtail fish tacos since the return from Mexico. Just unbelievable… I’d throw halibut, ling, yelloweye in the garbage to eat yellowtail… And I’m fully convinced that collars or throats are the best parts of them or redfish. Yellowtail, Mango, Lanes, Vermillion or grouper. Love em. Great lookin cook.
