Fished hard for yellowtail in Sea of Cortez. No luck. Crushed the tuna out trolling. Picked up a decent rooster by The Arch in Cabo.. Slaves get what they need. Free men get what they want. We did well on the yellowtail, awesome fish, hard fightin and delicious. I can understand why is so expensive now. I need to catch me a rooster, haven’t targeted them yet. One I make out of Mexican crema, lime juice , cilantro and optional hots sauce of your choice. The other I use plain greek yogurt , lime juice , cilantro and optional hot sauce of your choice. If your genetically opposed to cilantro that is optional as well. If like a little garlic add that. Sub adobo sauce for any hot sauce. Adjust per your own taste. I like to keep it simple. Life can be rough on us dreamers.
