Ive been doing the 500deg oven,5 min a pound for a while now. It works great. We buy bone in and cut the bone off to season then tie it back on to cook. For seasoning we like treager primerib seasoning and kosher salt. Plenty of both for 3-4 hours, get it to room temp then before cooking we coat the whole roast in butter. Makes great bark.

That’s been one of my favorite ways also. I do it a lot on the Traeger these days. The way you mentioned is awesome though.
