Great pictures an write up.

As others have said it's easy to remove the lower leg (front and rear) with just a knife. It is funny both guys think it's a rear quarter your sawing on.

Ted,

Double check which end you're shooting at on those Idaho elk. The end with Achilles' tendons is the no shoot zone. OP is sawing on the shoot zone end. grin

Quick Q. Is there a reason you’re sawing that leg off instead of cutting it at that joint above the Achilles’ tendon? Doesn’t matter….just curious as I have stopped carrying a saw.

That is a front leg and not a rear leg.
It was cold up on the mountain when I typed that post, and I was looking at it on my phone...That's my excuse anyhowsmirk
