Love side pork.
Eat more bacon than side pork...but it's always a welcome treat.
Side pork sandwich is my favorite. Fried side pork, salt and pepper and a slice of American cheese on bread.

I like to flour it and with salt,pepper and garlic it’s good as is but the sandwich sounds good. The bacon is too salty for me anymore.

Fairly "local" ranch here sells chicken, beef, lamb, and pork at the farmer's market in the summer. One thing they have I tried and like is jowl bacon. Thinking I'm gonna get a 1/2 pig for the freezer from another rancher here this spring. Might see if the butcher they use can get me some of the jowl meat in the package. I can season and smoke it up myself I bet.

What is side pork?
Is that jowl? "side pork" would be the layer of fat/meat between the hide and the ribs. Side meat would be bacon that hasn't been "cured" and smoked. "jowl" is what most of us would call "cheeks". It's just fat with thin layers of muscle, a lot like bacon. I've killed and slaughtered a LOT of feral hogs. I have NEVER seen a feral hog that had enough "fat" to make the bacon/jowls worth while. I left the side meat on the ribs and tossed the jowls with the head.
