I'll give you some examples.

If I am late coming to a long thread, start reading through it and find content that I appreciate someone taking the time to post, I can thank them for it without quoting them at a point in the thread where the subject matter has drifted.

Some threads are picture heavy. It's a way of thanking people without chewing up the space and bandwidth of quoting all of their photos.

Some threads are very educational. I can't add anything of value to the discussion, but would like to let those who contribute meaningfully that I appreciate the time they take to post.

I am in a hurry.

I am lazy.

Here's another thought. Advertisers are probably interested in total site activity. I read a lot of posts that I like but don't quote and respond to. Now if I click the like button, that shows as an engagement in site metrics. That might make this place more attractive to advertisers who make the site possible.
