In thoughts with my cousin who opened up today's Moose season in SE Alaska, here is something I cooked up today, using ingredients he helped me get fresh up there And today it's in the 70s where we had 107/102 the past 2 days, so I figured w/a 'cool spell' even though it's a little early, why not. Can't see it in the pic, but I added a few shots of Tabasco, some Black Pepper, and Cajun Blake's Ragin Blaze Chipotle infused Cajun seasoning. And a few Cheezits since I had no Oyster crackers. The stuff is GOOD!

So you know one mod to the recipe below that I had saved on my computer: Today, I did not drain ANY bacon grease Halibut Chowder 1 lb bacon - cut about 1/4" chunks Cook crisp, drain most of grease off leaving a tad - 'wet pot' Celery - dice enough of a bunch to yield about 1 1/2 - 2 cups Green Onion - Diced one whole Minced Garlic - 3 Tb Cook all that down w/bacon and add: 6 Tsp Chicken Bouillon - w/3 cups water 2 8-oz bottles of Clam Juice Bring to a boil Peel/Dice and add 6-8 potatoes (I used red - small/medium) Boil another 10-15 minutes till tender. Dice and add 2 1/2 lbs. Halibut (I cut small about 1/3") Season w/Ragin Blaze Cajun seasoning (thanks CajunBlake) Add salt if/as desired (Ragin Blaze low sodium) Add pepper if/as desired Then add 2 quarts Half/Half Cream Add instant mashed potato flakes to thicken as desired (flour can be substituted). Add 2 handfuls Parsley. You can add fresh cracked black pepper and hot sauce i.e. Tabasco or Louisiana Hot Sauce as you wish - once in your bowl. Also, can serve w/Croutons or similar. My mother helped who has a LONG history of cajun cooking experience being from New Orleans. This is good stuff gang. Enjoy!

Anyone have any Moose Tenderloin for barter LOL. Had Moose Spaghetti last summer up there, but really want to sink my teeth into a steak. To all Alaskans: Good hunting, fishing, and eating!

It's hard to beat some nice fat, fall moose ribs. If it weren't for luck there wouldn't be hunting. Good luck selling that idea. Some pay for luck with sweat; some pay others to sweat for them.

I just finished off my moose heart I fried up with onions and peppers, with some taters and peas on the side. I cant wait to dig into the rest of the little fork horn.

Moose tongue is a favorite and never hits the freezer around here....... Heart is a close second. Having grown up in California it makes me glad to hear my boys (8yrs, 6yrs and 4yrs) ask me if we have anymore moose tongue.....haha!

My cousin in SE AK is disappointed after regs were too generous on Cows the past few years as the herd has shrunk alot and he sees less each year.... SOOO, I may have to go visit Phil and bring some of my Chowder so I can beg for a little Tenderloin and some 'spare' ribs Moose Ribs, that sounds REALLY good! BBQ Sauce or ??? I'll let you natives savor the hearts and tongues, being the nice guy I am. Phil - congrats on that Moose. Good hunting...and eating guys.

True, but they had a meeting recently, he said they are not listening to locals, seems many are college educated and not from Alaska and talk about 'studies' but apparently the studies are not correlating with outcomes.
I guess it's like Obama, never willing to take ownership of his mistakes, and take a corrective course of action.

When you read up on browse issues, the lower browse is just right according to Swedish studies. And then when you drive by a fenced off study are that the AFG put up early 2000 or so and the browse inside and out is exactly the same... well it makes no sense to me.
Unless they were trying to skew teh bull/cow ratio for some reason. All I know is I"ve seen MANY less moose since it happened. And before it happened none seemed to be in bad shape RE winter kill type shape.
