Here's the best waterfowl recipe I have tried. It is awesome. (It's also great on venison)

Marinade:

One bottle of Honey Teriyaki Marinade
One bottle of sliced Jalapenos (include liquid it comes in)
4-5 cloves of garlic (can substitute minced garlic)
several sticks of sliced green onion (like wild onion)

-Let marinate for at least 24 hours.
-cut meat into smaller cubes or chunks (about 3"x3")
-wrap with bacon, fasten with tooth picks (sometimes I fold them over and put some of the sliced jalapenos in the middle and you can add pepper-jack cheese if you like)
-grill until bacon is crispy (meat should be about medium rare)

**key step - as soon as you take them off the grill, drizzle them with a fair amount of honey and let rest about 20 minutes.

It will melt in your mouth.

I like to smoke the whole goose, then bone it out. I then put the carcass into a large pot and make soup stock out of it. Throw away the carcass now, and strain the stock through a collander (or not). Then, using the stock and the smoked meat, make up a big pot of goose veggie soup.

Goose chili made with smoked goose is also to die for.

The legs/thighs from breasted out geese get saved for goose gumbo.

Since most years (except this one- migration down to here never seemed to happen) we shoot about a hundred geese off my buddy's farms, Canada Goose is a mainstay in my diet. Heck, when I'm feeling lazy I'll just throw the whole thing in the countertop rotisserie and roast 'til medium rare, then slice off the breast meat for sandwiches.
