As long as you're in Memphrica, I guess you have to go to Rondezvous, but it is FAR down the list on good BBQ there. It is basically a tourist trap now.
I lived in the great state of NC for almost 15 years and had the three main types of BBQ there. I loved them all. I also got lucky enough to spend a week in San Antonio and ate the cue every other day (the other days was Mexican). While areas will claim they have the best, I have to say that's right and wrong...because I love 'em all!
Karma and Trouble have busses, and there's always an empty seat.
Don't overlook some of the lesser known joints, they can provide some great BBQ. If you get the chance, drop by Tom's on Getwell. The rib tips are great but everything I've ever had there is too.
Not to be outdone by the Memphis joints, just across the border in Mississippi off of I-55 (immediately to the right when you get off at Goodman Rd.), there is a place called Memphis Barbecue Co. It is a newer joint that is a collaboration effort between two former world champions.
Enjoy.
I went to Tom's tonight, and had the BBQ rib tips, dry with a little wet sauce on the side, along with slaw, fries and pecan pie. It was a real dive with particle board add on rooms, which for a BBQ joint can be a great sign. The food was great. I ate next to a Memphis cop and also had the opportunity to meet the owner. I guess this place has been on the Food Network and was written up in the New York Times as one of the best BBQ places. Nice recommendation!
Tomorrow I'm going to check out the action by Beale St.
I know you Texas boys work magic with your briskets...and I have tried, Lord knows I have tried, but I just keep going back to pork ribs......just can't get those briskets right.....
Of the 4 KCBS meats, brisket was by far the hardest to learn to do right. But man o man, when done right it is heaven on s plate. My favorite to cook as well even though its the most labor intensive.
God bless Texas----------------------- Old 300 I will remain what i am until the day I die- A HUNTER......Sitting Bull Its not how you pick the booger.. but where you put it !! Roger V Hunter
Would love to try his one day. Heck until about 6 years ago you couldn't find pecha de res aka brisket in our stores here in central AL. The boom in Hispanics is what forced our local grocers to start carring them
A few BBQ joints I've visited over the past week in Memphis:
Tops BBQ Toms BBQ - Good rib tips Corky's - 2nd best ribs, a little fatty; pulled pork was good! Central BBQ - Best ribs. My #2 overall pick. The Commissary - Best pulled pork, dessert. My #1 place so far. Memphis BBQ (in MS) - Ribs were dry/oversmoked, pulled pork was good
I also really enjoyed Gus's World Famous Fried Chicken! They've been rated the #1 fried chicken in the US. I'm not a fried food guy but it was the best I've had! I also liked their fried pickles!
I only have 4 days left but I intend to go to the BBQ shop and The Rendezvous.
