Congratulations on your deer! As far at tenderizing the meat, I take a meat hammer and tenderize the steaks. It help to tenderize the BS for frying. Nothing better than BS.

Thanks for all the replies. I tried some more back strap yesterday.... I used a game meat marinade in the food saver marinade container... Vacuum sealed it for 24 hours then took a meat hammer to it. We were cutting it with a butter knife it was so tender. Some of the best I've had so far.
I've been using my uncles advice about cutting pork roast in the hamburger, close to a 50/50 split. Anyone try this, or found something better?

Congrats on a fine Blacktail Buck & great story.
Yes, I always use pork in my burger, however, I try to buy less fatty & boneless cuts. Last 2 years, I've used porkloins (buy on special or BOGOF), cube & add about 30% ratio, pork to deer.
Any left over pork loin can also be steaked !! WIN/WIN, right !
