I used to be able to buy dry aged beef from a local butcher. It was certainly the best tasting beef I’ve had. I used to have access to a walk in cooler that I would hang my deer in for 10-14 days. Best venison that way also.
With the hide on or off?
Hide on my deer. Gut the deer and use no water. Use a paper towel to dry the cavity and clean it up. There are people who hang deer longer but I never did.
