Auodad aren't even fit to be ground for tacos. Ask me how I know..........LOL
They taste fine, even older rams. Taste like meat.
Get the hide off asap, and get the quarters on ice asap. Ya, if you load it up in the pickup, hide on, guts in, and drive to the processor, it probably does taste like schiet.
The actual truth is, most folks that hunt them don't want to take the time or make the effort to cut one up. It's way easier to say they taste like crap and leave them lay.
