Riding a dirt bike, balls out on a mountain trail works for me. Total focus and concentration, one false move and you are toast!
On a less intense but useful level, sex with the wifey, fishing, hunting, shooting, hiking in the hi country, having a beer with your buddies etc...

It is more than amazing to me how much stress was induced by my job. Since retiring my blood pressure is down significantly. To further unwind I head to the garage and handload for a range trip or wrench on my car.

My level of stress in never as bad as hers-she runs a pre-school out of our house. Kinda puts things in reality.

Anything that takes 100% of my attention. I live 15 minutes from the river and 15 minutes from a sizable lake. On any given day, I am minutes away from practicing balance and technique going upstream while standing in a canoe (good for my back and my sanity) or chasing the wind in the sailboat. When I was younger, I could be flyin' the dirt bike within 30 minutes of leaving the house. Same 30 minutes gets me to the rifle range with similar results.
And then there's sex with the wife.
I rarely ever resort to alcohol for stress. It's usually a waste of a good brew.

Since I quit drinking it's the following:
Walking the dogs in the morning for 60-90 minutes. It gives me time to plan my day and just think about stuff.
Working out hard enough to kick in a few endorphins.
Dicking around in the garden.
Dicking around in the reloading room.
Setting up and checking trail cams
Fishing. There's some powerful magic in drowning a worm anytime of year.
Building furniture.
