It's not easy to reheat med rare beef without nasty taste, but a pro told me to put a little veg oil in a pan and slowly heat the chilled steak or rib slice slowly, (never ever add au jus or moisture, do not cover it, boiled beef is what you will get), and pan no hotter than 120 deg...when the meat is warmed clear through, transfer it to a smoking hot ribbed cast iron pan, sear each side to exhibit pronounced 'grill tracks'.


Well this is a fine pickle we're in, should'a listened to Joe McCarthy and George Orwell I guess.

Used to get left over prime rib and eggs for Breakfast at a local eatery.

The Chef warmed the left over prime rib in warm beef broth.

It didn't over cook the meat at all!

I like to steak it out thick and then cube it up. Reheat it gently in a brown gravy with red wine, mushrooms and onions. Little bit of left over fresh Rosemary from the roasting rub, and finish with sour cream. Pour over or toss in with broad egg noodles. Best stroganoff ever. Just don’t heat the meat so hard in the sauce that you cook it through. Just reheat it gentle.

My preference for the left-over prime rib, is to take the center cut ( least cooked), grill it like a rib eye steak! Matter of fact, if given the option.....I’d much prefer that for the first go round with prime rib. Never had much use for prime rib! memtb

Cheese steak sand w/sautee'd onions

So on the roast ,I try to only cut for the dinner servings keeping the roast totally whole . This way you can " shave" the beef for the sandwiches ,you gotta have good knives though

Did similar with a roast a couple weeks ago. Shave it razor thin, onions the same (have a small electric slicer). Made a killer sandwich on toast with Dijon mustard.

Prime Rib hash. A local restaurant used to serve it on Sundays to use up the leftover prime rib from Saturday. Some diced potatoes and diced prime rib covered with several over medium eggs makes a mighty fine breakfast!
