I roasted some beef cheeks last week.They make excellent tacos.I like to top with onion,cilantro, jalapenos and key lime juice.I was a little skimpy on the meat here but that was all I had left.I love barbacoa tacos,but sometimes when you get them at a Mexican restaurant they can have a little funk to the taste,I'd really rather make my own.

From what I can gather, you generally have to braise them low and slow. Any recipe for short ribs would likely work fine.
