Not to be a hijack dick but organic, homegrown tri-tip is also edible. Sam I've been a beef man for as long as I can remember. I'm not really a pork or chicken fan but I'll eat both from time to time. I love a good steak but a fresh piece of Axis backstrap on the grill is as good as it gets for me. OBTW that tri tip looks incredible as well!
