Any food/coolers/grills/water containers are not allowed to be unattended in the back of a truck, or it will get confiscated and a ticket will be written. Every time I stopped I had to transfer all that junk to the front, and you stop A LOT. I wouldn't leave fishing gear in the back for fear of theft. A camper shell solved all these problems for me.
