I tried a young groundhog. Was cooked in a crockpot on low for I think at least 12 hrs. When we pulled it out, the meat just fell off the bone. Good and tender, and smothered in bbq sauce, and served with new potatoes. The meat fibers reminded me of a really tender roast.
