I agree its just bad.
Either you've not had it done right, or you have serious personal flaws.
Does not matter how slow you cook it, nor how much crap you slather over the top. Crappy meat cooked slow is still crappy meat.
Give me a ribeye, a little salt, a bit of pepper, seared 90 seconds on each side.
