If it needs sauce to eat it just give it to the dog.
There are sauces that are nice with steak that didn't strictly need sauce.
Mmmm, a good Bearnaise is fantastic, with beef.
Applesauce with pork.
Mint sauce with fatty lamb.
Complementary, not contrasting, for the most part.
