Walleye fillets in a Weber fish basket with a cooking temp of 250-275 take 5-7min and are flaky with just a hint of smoke.
In the event that one only has a gas grill handy but wants a bit of smoke flavor, "The Amazin' Smoker Tube" works pretty well. Get the tube full of pellets burning then put the tube and meat onto the grill well ahead of actually cooking the meat, this is just a "cold-smoke". Then cook the smoke-tainted meat as you normally would on the gas grill.
You can also put one of the Amazin' Smoker Tubes directly onto your Weber grill grate with the burner going under it. You'll get A LOT of smoke very quickly.
I can walk on water.......................but I do stagger a bit on alcohol.

Mine works very well when it doesn't go out. Waking up to a 60 degree brisket sucks.

Dammit, I thought BGE's were too expensive, but now I sportin wood thinkin bout the sear I could get on my steaks with those 800 degree temps.
I'd have to hook up a leaf blower to my Webber propane & change the jets to gt it that hot. I’ve got a Weber, a Bradley smoker and a Kamado egg. The Weber is good for quick stuff, but when I want something low and slow or a great sear on a steak, I fire up the egg. I’ve found the Bradley is quicker to set up than the egg but too much of a PITA to clean after use. I almost pulled the trigger on a Traeger today but decided not to bother. I’ll sell the Bradley, too. BTW, that looks Ike awesome pizza, duck. Isn’t the Komodo a BGE “knock off” ? That’s the one shaped similar to the BGE, but all metal I believe . Mine’s a Vision Kamado. Ceramic, made in China. I bought it used, though. $250 vs. $1500 The Broil King Kamado is metal.

Duck, Looks great. How are you transferring from your peel to stone? I see some parchment in one of the pics . We've tried cornmeal, which works but I always use too much, and then have some crunch.

Another perfect White Pie (with 1/2 anchovies for me) on the Big Green Egg w/the Pizza Porta oven installed. Extra olive oil this time. I also rolled mozzarella into the crust. Yum yum This one baked at 550 dome temp.
