Lentils are high in total carbs. They are slow to break down generally, but not good for a low-carb diet.

Cabbage and cauliflower are king. Onions are fairly high in carbs, too, and the carbs are sugary rather than complex.

Ham, cabbage, and cauliflower make very good soup.

Blended cauliflower with butter makes a very good mashed potato substitute.
