For big game, I like my Sako 85 laminate/stainless in .338 Federal and the Winchester Model 70 Featherweight I just ordered from FN in .25-06.

I'm recoil-sensitive and these two will get the job done on anything I'm likely to ever hunt and they won't hurt my shoulder.

For smaller critters (under 400 lbs) in open country, the .25-06 gets the nod. For those same critters in tight quarters or larger game anywhere, the .338 Fed takes care of business.
