I am driving a 2003 GMC K1500. Its been a great truck, no problems to speak of, and gets just terrible fuel milage. 14.5 average. The best I can get is 18 on a flat loop trip. Any uphill and its 16 mpg. Its a 5.3 V8 with the automatic and 4:10 gears (what was I thinking? or drinking?)

My next truck is going to be a 2003 Tacoma with low miles and the 4cyl. As soon as my wifes friends husband decides to sell it.

I think you ought to look at the Tacoma but maybe not a new one. They hold their value well from those I have looked at and they seem to be very reliable. The 4cyl gets 22 to 24 mpg on the highway with the manual transmission. The V6 isn't so fuel friendly though.
