I have a few good knives. Not many. I guess I don't need many for what I do.
Grew up working in my dad's meat packing company. Learned at an early age how to sharpen a knife by hand with a correct bevel. In my experience, nothing beats an edge put on a knife by someone that knows how to hand sharpen a knife.
