For accuracy, I like IMR-4064, that is the powder I use when I want to know if a certain .375 will shoot..It seems to work everytime...My hunting loads are sometimes RL-15..Those are my chosen powders..
For the big stuff I wouldn't consider less than a 300 or 350 gr. bullet in the .375..If I want a lighter bullet I'll use a lighter caliber..In fact I am pretty much sold on the 300 gr. bullet for lighter stuff like Impala, Elk or deer..It kills well and you get less meat loss.
