WOW! Lotsa great options here. I'm a Buck fan and would recommend any knife they make from their 420HC stainless steel.
For a good knife w/o breaking the bank, i think Jim62's recommendation is just about right. It looks solid enough and their 420HC and proprietary heat treat makes for a great edge-taking blade.
I'm a 2-carry kinda guy and Buck's Paklite Skinner will be my go-to knife for these types of tasks - and talk about inexpensive/value? Yea, try $15 for one of these awesome little guys!
