BrentD was right on. I piece mine up, put them in a sandwich bag, fill it full of water and freeze it. Tastes like fresh.
When Im ready to cook I parboil the pieces with a little onion for about 5-6 minutes, roll in flour, S&P and pan fry in butter.....medium heat till golden brown. Make gravy out of the junk left in the pan if you like... Squirrel is simple, easy to prepare and the BEST....
