Sure. The way the rules of evidence work, only the state could introduce most of Zimmerman's out of court statements - if offered by defense, the statements would be excluded as inadmissable hearsay.
Because the state has in effect, told Zimmerman's story(s), defense has little to gain and much to lose by having Zimmerman take the stand and thereby subjecting him to cross examination.
